I know what you’re thinking: Did he really just give us a simple roasted carrot recipe? Yes, I absolutely did. Hear me out, though—these aren’t just any carrots. In the Kingdom of Hyrule, Swift Carrots are a prized crop from Kakariko Village, known for their speed-enhancing properties. While we may not gain a boost to our stamina in real life, there’s something undeniably delicious about a simple roasted carrot enhanced by some aromatics. Nothing wrong with a straightforward and accessible recipe once in a while. Sometimes, simplicity is the real treasure.
"A fragrant swift carrot that's been lightly roasted. It doesn't have any special effects, but it will restore some health."
In this recipe, we’re putting a creative spin on the flame-roasted whole carrot you might recall from the game. Instead of just tossing a carrot onto a fire, we’re transforming this humble vegetable into a beautifully roasted side dish that’s flavorful, vibrant, and perfect for any meal. With a touch of honey, a sprinkle of fresh dill, and a hint of buttery richness, this dish is a worthy interpretation of Kakariko’s cherished crop—and a worthy addition to your dinner table.
Ingredients
1 lb carrots, peeled
2 tbsp olive oil
2 tbsp butter, softened
2 tbsp honey
1 tbsp fresh dill, chopped
Salt and pepper
1 lb carrots, peeled
2 tbsp olive oil
2 tbsp butter, softened
2 tbsp honey
1 tbsp fresh dill, chopped
Salt and pepper
Preheat the oven to 400°F. Chop the carrots into ¾ inch to 1 inch pieces. Add the carrot pieces to a large bowl. Season the carrots well either salt and black pepper and add the olive oil. Toss the carrots with your hands to fully coat them in the oil and seasonings.
Cover a baking tray with aluminum foil and arrange the carrots on the foiled tray so that they are not crowding each other or on top of each other. Place the tray in the oven and allow the carrots to roast for 30-40 minutes, until just softened enough to be pierced by a fork.
While the carrots are roasting, let’s prepare the compound butter that will flavor the carrots. Add the softened butter to a small bowl. Add the honey and chopped dill to the butter in the bowl.
Use a fork to press the honey and dill into the butter. Keep pressing and mixing until the honey and dill are evenly blended throughout the butter, creating a soft paste.
When the carrots have fully roasted, remove them from the oven and carefully add them to a bowl. Add the compound butter to the bowl with the carrots and use a large spoon or spatula to toss the carrots, fully melting the compound butter into the carrots. Ensure all of the carrots are evenly glazed.
Once the butter is fully melted and the carrots are evenly glazed, your carrots are ready to serve. Enjoy!
