ZORA SPICE

The Zora consume a diet mostly of fish and seafood, along with fruits and vegetables. Fish skewers, seafood stews, and other such dishes are all part of the Zora diet. The question is, how do they season these? Surely they use more than salt. Think about this, I wanted a spice blend that Wild complement these seafood dishes. Spices such as paprika, coriander, and cumin are common across a number of the Hyrulean spice blends I have developed so far. I wanted to take those spices and infuse them with “seafood friendly” spices such as dill and dried lemon.  The resulting spice blend did indeed put a nice fish-friendly twist on the “traditional” Hyrule flavoring profile. I give you Zora Spice!

Ingredients
2 tsp dried dill
2 tsp dried oregano
2 tsp dried thyme
2 tsp paprika
1 ½ tsp garlic powder
1 ½ tsp onion powder
1 ½ tsp dried lemon zest
1 tsp salt
1 tsp coriander
1 tsp cumin
½ tsp black pepper

If you are using fresh lemon zest, first remove all of the zest from one lemon using a lemon zest grater. Place a sheet of parchment paper on a baking tray, and spread the lemon zest out on the sheet of parchment paper. Place the tray in a cold oven and set the temperature to 170°F. Allow the zest to dry in the oven for 20-25 minutes until fully dried.

Combine all of the ingredients in a bowl and blend together thoroughly. If you have a mortar and pestle, add the spice blend to the bowl and grind down until all spices are well blended and uniform in texture. Great for use with fish.
