BANANA PANCAKES



Pancakes. Pancakes are a wonderful thing. My kids love pancakes. Many weekend mornings are spent making pancakes in our house for breakfast. The most popular pancakes in the house are probably my banana pancakes. I make them when we have guests for breakfast at the house quite often as well, and I’ve even been asked to make them when I’ve been away from home. Here is the recipe.

Ingredients 
1 cup white flour
2 tsp baking powder
1 tsp salt
1 tbsp sugar
3 tbsp brown sugar
¼ tsp cinnamon
¼ tsp all spice
1 beaten egg or ¼ cup Greek yogurt
¾ cup milk
2 tbsp melted butter
1 tsp bourbon vanilla extract
2 bananas

Combine first seven ingredients into a bowl. In another bowl add the peeled bananas and mash them well with a potato masher. Melt the butter and add it to the bananas. Whisk them together. Whisk the cold milk into the mixture, then the beaten egg, then lastly the vanilla. Combine wet with the dry and stir to fully combine.

Heat a pan over medium heat or heat a griddle to 300 degrees Fahrenheit. Spray with cooking spray to grease. Cook the pancakes in batches. Using a ladle, slowly pour full ladles of the batter onto the cooking surface, using the bottom of the ladle to round them out. Cook for 3-4 minutes or until you see bubbles forming in the pancakes and the bottom releases easily from the surface with a spatula. Flip the pancakes and cook for 2-3 minutes more. Repeat for each batch.
