PUMM’S HOT PUMPKIN SOUP

This dish dates back to some of the earliest days of Hyrule, when the Hylians did not live on the surface, but rather above the clouds in Skyloft. On one of the many floating islands above the clouds, a man by the name of Pimm owned an inn and bar called the Lumpy Pumpkin. There he made a delicious, heart restoring pumpkin soup that was famous across all of the skies. This soup was especially loved by Eagus of the Knight Academy, and it was offered in a ritual each year to appease the spirit Levias.

We will use canned pumpkin purée for this soup to make it a little easier. You could cook raw pumpkin down and purée it yourself, but this saves us a lot of time and effort! This will be a thinner, broth based pumpkin soup. They do drink it out of bottles after all! We will leave the vegetables in chunks rather than puréeing them to match the vegetables floating in the soup in the in-game picture. The result is a simple but flavorful pumpkin soup that can be easily drank; just what one would expect to find at a pub and inn floating in the sky!

Ingredients
2 tbsp butter
1 onion, diced
2 carrots, diced
2 stalk of celery, diced
1 tbsp ginger, grated
4 cups vegetable stock
1 15 oz can of pumpkin purée
1 12 oz can evaporated milk
1 tbsp brown sugar
1 tsp salt, plus more to taste
¼ tsp black pepper
¼ tsp cinnamon
¼ tsp allspice

Add 2 tbsp of butter to a pot over medium heat. Once the butter has fully melted, add the onion, carrot, and celery to the pot and sauté until the onions are soft and translucent, about 5 minutes. Add the ginger and sauté for 2 more minutes, stirring as needed.

Add the vegetable stock followed by the pumpkin purée. Stir to blend the pumpkin purée completely into the soup. Add the salt, pepper, cinnamon, allspice, and brown sugar. Stir to blend the ingredients into the soup. Turn the heat to medium-high to bring the soup to a boil, and then turn the heat to medium-low to maintain a simmer. Simmer the soup for 15 minutes, stirring as needed.

The vegetables should now be completely soft. Remove the soup from the heat and add the evaporated milk. Stir to fully incorporate the milk into the soup. Allow the soup to simmer for an additional 5-10 minutes. Salt to taste. The soup is ready to serve.

To serve, pour the soup into bowls and enjoy… unless you’d rather drink it out of a bottle!
