SALT GRILLED PRIME MEAT

 


There is some beauty to the simplicity of the cookery of Hyrule. That is not to say that there are not any more involved recipes, as there are, but there are a number of delicious meals that can be made fairly easily with only a few ingredients. This is one those recipes. One could find this meal being commonly prepared in any of the kitchens of eastern or central Hyrule. Meat or poultry is marinated in salt and then grilled with minimal additional seasoning. The salt draws out moisture and permeates into the meat, making each bite tender and flavorful.

Ingredients
1 ribeye steak
1 chicken breast
1 tbsp kosher salt, divided
1 tsp black pepper
1 tsp garlic salt
1 tsp ground rosemary
Olive oil
Lemon or lime wedges, for garnish 
Basil leaves, for garnish

Pat the steak and chicken breast dry. Season the steak with 1 tsp of kosher salt on each side. Season the chicken breast with ½ tsp of salt on each side. Let them marinade in the salt for 45 minutes to an hour.

Once they have finished, the salt will have drawn out moisture. Using paper towels, wipe the salt off of the steak and chicken breast. Pat them both as dry as possible with paper towels.

In a small bowl, mix the black pepper, garlic powder, and rosemary. Brush both sides of the steak and chicken breast with olive oil. Season both sides of the steak and chicken breast generously with the seasoning (you may not use all of it).

Heat your grill at a high temperature setting (about 450 °F). Grill the steak for 4-5 minutes on the first side, then flip and grill an additional 3-5 minutes for medium-rare (130-135 °F) or 5-7 minutes for medium (140-145 °F). Grill the chicken breast for 8-10 minutes on the first side, then flip and grill for an additional 8-10 minutes more (an internal temperature of 165 °F). Grilling times may vary depending on the grill, so cook to temperature, not time.

Allow the meat to rest on a plate for 5-10 minutes before serving. To serve, arrange on a plate on top of a large leaf of lettuce greens. Garnish the steak with basil leaves, and serve with lemon or lime wedges. Japanese (or traditional) potato salad makes an excellent accompaniment for the dish.
