FRIED EGG AND RICE

One of the easiest and most commonly found meals across the kingdom of Hyrule, fried eggs over rice make for a filling breakfast or a quick dinner.  With rice being a major staple among the various peoples of Hyrule, it’s not uncommon to find day old rice in any of the kitchens. The Hyrulean cooking pots are also very well suited for high heat searing, making fried eggs paired with a simple fried rice an extremely easy and perfect comfort food in pretty much any of the villages.

“The soft egg yolk pairs well with the fresh rice in this simple dish.”

Since the in-game photo shows an off white, almost tan colored rice, I decided to take some liberties and use a fried rice as the base for this dish. I imagine any Hyrulean household would very commonly have day old rice on hand, and those cooking pots would be perfect for tossing a fried rice together, so this seemed to be the perfect way to kick this dish up a notch. Topping it with a fried egg also allows for that runny yolk to ooze into the fried rice adding even another dimension of flavor. Fried rice, fried egg, and some dressed salad greens… a simple, yet delicious, brunch (or even dinner)!

Ingredients
2 cups Japanese Rice
1 small onion, minced
2 cloves of garlic, minced
¼ cup green onion, finely sliced
½ tsp salt
1 tbsp tamari
¼ tsp white pepper
6 eggs, divided
Additional salt and pepper
Vegetable oil
Dressed salad greens

Fried rice is best when made with old rice, so you will want to make the rice one to two days ahead of time. Make the two cups of Japanese rice on the stove top or in a rice cooker or instant pot according to the directions on the rice packaging. Once the rice is finished, place in a container in the refrigerator for a day or two, until you are ready to make the fried rice.

Fried rice moves pretty quickly, so I recommend having all of your ingredients prepped and ready. Remove the rice from the refrigerator and allow it to come to room temperature before cooking (at least 20 minutes).

Place a wok or a pan on relatively high heat. Scramble two of the eggs in a bowl, seasoning the eggs with some salt. When the wok or pan is heated and ready, add a tablespoon of vegetable oil and swirl it around to coat the surface of the pan or wok. Add the scrambled egg and let it fry into an omelet. Fry the egg for approximately 1 to 1½ minutes per side, carefully flipping the omelet halfway through. Remove it from the pan and reserve it on a plate.

Add another tablespoon of oil to the pan or wok and add in the onion. Cook for a minute or two until slightly browned. Add in the garlic and cook for 30 seconds. Push the onion and garlic up to the sides of the wok or out to the edges of the pan.

Add another tablespoon of oil and add the rice. Fluff and toss the rice with a spatula to separate the clumps. Do this for about a minute and then add in the salt, white pepper, and the tamari. Toss and fluff the rice for another minute, allowing the ingredients to blend through the rice. The rice should turn a light brown color as the tamari blends.

Lastly, return the omelet to the pan, breaking it up into small pieces with a spatula. Stir the omelet pieces into the rice as you break it up. This should take about another minute. Once the omelet is broken up and completely mixed into the rice, the fried rice is done. Remove it from the pan or wok and reserve it in a bowl.

Reduce the same wok or pan to medium heat, or set another smaller pan over medium heat. Add a little vegetable oil or cooking spray to the pan. Fry the remaining four eggs, either individually, in batches, or all at once (whatever your comfort level is with egg frying). Season each egg with salt and pepper once in the pan. Fry the eggs for about 3 minutes each until the white has fully set. You can place a lid on the pan to help the top of the egg steam and set faster. Steaming will also help the yolk to cook a little if you prefer a little less runny yolk (just don’t completely cook the yolk as the runny yolk is a perfect sauce for the rice). Once the eggs are fully cooked, you are ready to serve.

To serve, place a portion of fried rice on the plate, and top the rice with a fried egg. Add a portion of dressed salad greens to the side, and garnish the egg and rice with some finely sliced green onion.
