CEREMONIAL PLATTER

 


How do you feed a large crowd at a gala event with attendees from all across the kingdom of Hyrule, including all of the different races each with their own dietary needs? You create a party platter! The ceremonial platter was served at the Champions' Inauguration ceremony. It included meat, seafood, and vegetarian sandwiches catering to each of the peoples from around the kingdom. 

A Zelda party platter! What could be better? This is a great way to add a Zelda related dish to a party. An assortment of beef, fish, and vegetarian sandwiches that guests can dress up in anyway they want. The beef burgers and salmon are easy to prepare as well, and the brown sauce that will be included is basically a simplified tonkatsu sauce that can be made with just four ingredients. To keep it simple, I used a pretzel roll for the “rock bun.” That seemed like the best option to keep this being a fairly easy to make party platter.

The recipe below is for one platter of five sandwiches. This recipe can easily be multiplied to create more platters (or a larger platter) of sandwiches.

Ingredients
⅔ - ¾ lbs ground beef
1 large salmon filet
1 yellow bell pepper
4 brioche buns
1 pretzel bun
Cheese Slices (American, cheddar, Muenster, Havarti, or similar cheese)
Lettuce leaves
Cherry tomatoes, sliced
Large tomato, sliced (optional)
Salt and pepper
Vegetable Oil
2-4 tbsp butter

Sandwich Sauce
¼ cup ketchup
3 tbsp Worcestershire sauce
2 tbsp oyster sauce
1½ tbsp sugar 

The first thing we will do is roast the peppers for the vegetarian sandwich. Preheat the oven to 400°F. Place the yellow bell pepper (or multiple peppers if you are roasting more than one) on a baking tray, and place it into the preheated oven. Roast the pepper(s) for 20 minutes, and then turn the pepper(s) a quarter turn. Roast the peppers for 20 minutes more. At the time, the skin should be blistering and slightly charred, and the peppers should be slightly softened and deflated. Remove the tray from the oven and place a large inverted bowl over the peppers on the tray. This will created a "sealed" dome over the pepper(s), allowing the pepper(s) to steam. Steam the pepper(s) for 15 minutes to release the skin. After this time, remove the bowl and allow the pepper(s) to cool. Once cooled, use your fingers to peel the skin from the pepper(s). Slice the pepper(s) in half, removing the seeds and stems.

Next we will make the sandwich sauce. This sauce is essentially a simple homemade tonkatsu sauce. Mix the ketchup, worcestershire sauce, oyster sauce, and sugar together in a bowl. Mix vigorously until the sugar is fully dissolved into the sauce and the ingredients are all well blended. Place the bowl in the refrigerator until it is time to serve.

In order to make the burgers for the sandwich platter, divide the ground beef up into two portions. You will want two round 1⁄2 inch patties with a 4 inch diameter. You can shape these using two r inch diameter jar or canister lids or a ring mold of the same size. Once the patties are made, set them aside.
 
Cut the salmon filet into two square-ish portions with sides roughly 31⁄2 inches long. The filet should be about 1⁄2 inch thick. Season the salmon filets generously with salt and pepper and place them on a greased baking tray. Melt 1 tbsp of butter in the microwave (20 seconds on high setting), and then brush the top of the salmon filets with the melted butter. To cook the salmon filets, broil on high for 8-10 minutes or bake in an oven at 400°F for 10-12 minutes. When the salmon is done, remove it from the oven. Remove the skin from the bottom of the filets before placing on the sandwiches.

While the salmon is roasting, fry the burgers. Season the burgers generously with salt and pepper on both sides. Set a pan over medium-high heat.  Add a tablespoon or two of oil to the pan and swirl it around to coat. Place the burgers in the pan and fry for 3-4 minutes, flip the burgers, and fry for 3-4 minutes on the opposite side. Remove the burgers from the pan and set aside.

In another pan (or the same burger pan if it isn't too messy from frying the burgers), add a tablespoon of butter. Once melted, place the buns cut side down in the pan and toast the buns for a minute or two until the cut side toasts and becomes a little golden. Repeat this process in batches until all five buns are properly toasted. Add another tablespoon of butter to the pan per batch of buns as needed.

Now we can assemble the sandwiches. You can choose to top the sandwiches in whichever way you choose, but if you are trying to match the in-game photo then top them in the following manner.

Meat sandwich #1: Place a burger patty on one of the brioche buns and top with a slice of cheese.

Meat sandwich #2: Place a burger patty on the pretzel bun.

Salmon sandwich #1: Place a piece of salmon on a brioche bun.

Salmon sandwich #2: Place a piece of salmon on one of the brioche buns and top the salmon with some of the lettuce.

Vegetarian sandwich:  Stack a slice of cheese, lettuce, sliced cherry tomatoes, and two roasted pepper halves in order on a brioche bun.

Top the sandwiches with the other bun halves, and place a toothpick through each sandwich, except for the pretzel roll sandwich. Place a small ramekin filled with the sandwich sauce in the center of the platter and arrange the sandwiches around the platter as shown in the picture at the top of the page. You can also optionally decorate the platter with basil leaves. Enjoy!
