FRIED BANANAS

 


The southern rainforests of Hyrule grow a number of fruits that are not as easily to find elsewhere in the kingdom. These fruits are widely used by the Gerudo and the people of Lurelin Village in their local cuisines. One such dish is a dessert which requires mighty bananas. The bananas are coated in a batter made from Tabantha wheat and cane sugar and then fried over high heat. This dessert is especially popular in Lurelin after one of their fantastic seafood dinners.

This is a pretty straightforward dessert to make. The key to this dish is starting with the right bananas. You want bananas that are just ripened so that they retain some firmness after frying. The batter will use a mix of flour and potato starch (rice flour can also be used) along with some salt, sugar, baking powder, and cold water. The batter dipped bananas will be quickly fried over fairly high heat to create a naturally sweet and semi crunchy treat. They are correct in saying children love this dish, because my daughter was in love with the fried bananas… but I was also quite a fan. I’ll take a plate of these while relaxing on Rimba Beach any day! 

Ingredients
8 just ripe bananas, peeled
½ cup all purpose flour
¼ cup potato starch
1 tsp baking powder
¼ tsp salt
½ tbsp sugar
1 ½ cups cold water
Canola oil or Vegetable oil

Before beginning, ensure your bananas still have a little firmness. If the bananas are overripe, they will be mushy after frying. A banana that is just ripe (or just slightly under ripe) will maintain some firmness after frying.

Add the flour, potato starch, baking powder, salt, and sugar to a bowl and blend them well with a spatula or whisk. Slowly add in the cold water and whisk to form the batter. The batter should have a thinner consistency, similar to pancake batter. 

Pour vegetable oil into a pan over medium-high heat. Pour in enough vegetable oil to ensure the bananas are fully submerged during frying. Allow the oil to come to 400°F.

Once the oil comes to the proper temperature, dip the bananas into the batter one at a time. Ensure each banana is fully coated in the batter. Allow any excess batter to drip off and add the banana to the hot oil. Repeat this process until 3 or 4 bananas are frying in the pan. Do not overcrowd the pan.

Fry the bananas until they are golden, about 3-4 minutes. Flip the bananas over halfway through the frying process. When they are finished frying, remove them from the oil, and allow them to drain and slightly cool on a metal cooling rack. Repeat the process until all of the bananas have been fried.

Serve two bananas with a dollop of whipped cream, honey, or condensed milk.
