SIMMERED TOMATO

 


Hylian Tomatoes have helped to revolutionize the cuisine of Hyrule. With the increased growth of this fruit throughout the grasslands, more and more dishes including tomatoes are appearing in each of the kingdom towns and villages.

One popular recipe is a fairly simple preparation, simmered tomato. Tomatoes are simply peeled and stewed down in a cooking pot to create a compote of sorts. These tomatoes can be eaten on their own or used as a sauce for other Hylian dishes.

When simmered until tender, nutritious tomatoes can give this dish a sour kick."

This dish is essentially a ‘Hyrulean’ version of stewed tomatoes. Fresh, vine ripe tomatoes are peeled and then stewed down in a pot with aromatics, such as onion, garlic, and basil. This dish is as simple as it gets, and I could see this being an extremely popular tomato preparation in any Hyrulean kitchen. Some roasted poultry, Hylian rice, and a bowl of simmered tomatoes… I’d be happy telaxing in Hateno with this simple dinner any night.

Ingredients
8-10 vine ripened tomatoes
1 small onion, finely diced
2 cloves of garlic, minced
1 tsp salt
1 tbsp sugar
1 tbsp white balsamic vinegar
2 sprigs of basil
½ cup chicken stock (optional)
Olive oil

Optional garnishes (per serving):
1 red cherry tomato
1 yellow cherry tomato 
2 blanched green beans
2 blanched broccoli florets

The first thing we want to do is peel the tomatoes. Set a large pot of water over high heat and allow the water to come to a boil. Fill another bowl with ice water. Remove the stems and core from all of the tomatoes. Cut an X in the skin at the bottom of each of the tomatoes. Reduce the boiling water to a simmer. Place the tomatoes into the boiling water, and allow them to blanch for about 1-2 minutes, or until the skin starts to peel off. Once this happens, remove the tomatoes and place them immediately into the ice water.

Once the tomatoes are cool enough to handle, peel the skin from each tomato, and reserve the partially softened tomatoes in a bowl.

Set a Dutch oven or large pot over medium heat. Once warm, add the oil and coat the pot. Add the onions and sauté for 3-5 minutes, until soft and translucent. Add the garlic and sauté for one minute. 

Add the peeled tomatoes, along with the reserved juices, into the Dutch oven. Use a wooden spoon to break the tomatoes apart a little. Add the salt and sugar. Stir the contents together. Add the vinegar and nestle the basil sprigs into the tomato mixture. 

If there is not enough liquid from the tomatoes in the pot, you can add the chicken stock at this time. Stir it through the tomatoes.

Allow the contents to come to a low boil. Reduce the heat to low and allow the tomatoes to simmer for 25-30 minutes and reduce.

Once the time has passed and the tomatoes have softened and the liquid has mostly reduced, remove the basil sprigs and discard them. The simmered tomatoes are ready.

If you want to serve it to match the in-game picture, pour some of the simmered tomatoes into a small, shallow serving bowl and garnish with the tomatoes, green beans, and broccoli. You can also ignore the garnishes and just serve it! The simmered tomatoes also make a great sauce for fish or chicken, and they are also great as a simple side dish to accompany your meal.
