CARROT CAKE

 


The carrots of Kakariko Village are on of their prize crops. These delicious carrots find their way into a large number of recipes throughout the kingdom. Swift carrots, along with endura carrots, form the base of soups, stews, curries, pilafs, and a variety of other recipes, including desserts.

One dessert in particular that makes good use of the carrots is the carrot cake. This simple cake can be easily made at any cooking pot using grated carrots, tabantha wheat flour, sugar, and butter. A moist and delicious cake packed with sweet carrot flavor. You can find this on the dessert menu in most Hylian towns, and it’s a popular treat in the stables.

This is an extremely straightforward cake to make. We will slowly layer in the ingredients a little at a time in a standing mixer to form the batter, and then fold in the grated carrot at the end. The egg and sugar will be creamed first, and the butter, oil, and vanilla will be mixed in afterward. The dry ingredients will be mixed in at this point, and then finally the carrots at the end. The cake will be baked in a cake pan and topped with a dollop of homemade whipped cream (and a decorative carrot if you so choose). Mildly sweet and packed with carrot flavor, it really is a wonderful dessert. I would love a slice of this cake while relaxing at a stable and enjoying the serene tunes of the Stable Trotters.

Ingredients
4 eggs
1 cup granulated sugar
¾ cup brown sugar
3 cups carrots, grated
¾ cup vegetable oil
¼ cup butter, melted
2 tsp vanilla extract
2 cups flour
1 ½ tsp baking powder
1 ½ tsp cinnamon
½ tsp salt
¼ tsp nutmeg

Whipped Cream
1 cup cold heavy whipping cream
2 tbsp sugar
1 tsp vanilla extract

Preheat an oven to 350°F.

Set up a standing mixer with a whisk attachment. crack four eggs into its bowl and add the granulated sugar and brown sugar. Turn the mixer onto a medium-low setting and allow the eggs and sugar to mix and cream for about 5 minutes. 

Turn the mixer off, and add the vegetable oil, melted butter, and vanilla. Beat on medium-low again for an additional 2-3 minutes, until everything is well blended. Turn the mixer off again.

In a separate bowl, combine the flour, baking powder, salt, cinnamon, and nutmeg. Whisk the dry ingredients together with a hand whisk until well blended. Add the dry ingredients to the wet ingredients in the mixer. Turn the mixer back on to medium-low and allow the dry and wet ingredients to be whisked for about two minutes, until a batter is formed. Stop the mixer and scrape the sides of the bowl with a spatula as needed to fully mix all of the ingredients.
Remove the bowl from the mixer and add in the shredded carrot. Use a spatula to fold the carrots through the batter evenly.

Pour the cake batter into a greased 8 inch cake pan. Be sure not to fill the cake pan more than ⅔ full. Place the pan in the oven and bake for 35-45 min or until the cake is fully baked. The cake is done when you can pierce a toothpick through the center of the cake and it comes out clean.

When the cake is fully baked, remove it from the oven and allow it to cool in the cake pan for about 10 minutes before removing it. Remove the cake from the cake pan and allow it to fully cool on a cooling rack.

While the cake is cooling, make the whipped cream. Combine one cup of heavy whipping cream, 2 tablespoons of white sugar, and 1 teaspoon of vanilla extract in the bowl of a standing mixer. Attach a whisk attachment and whisk the contents at medium speed for about 5 minutes or until the cream mixture whips up into stiff peaks. The whipped cream can also be made ahead of time and kept cold in the refrigerator.

Once fully cooled, slice the cake into wedges to serve. Serve each slice with a dollop of whipped cream on top. You can also optionally garnish it with a small shaped carrot, real or fondant.
