SPICED POULTRY SKEWER

 


Though meat, fish, and even mushrooms are the typical ingredients to find being cooked on skewers over a fire in the kitchens and wilds of Hyrule, poultry is also cooked and eaten in this way. Marinating the poultry in Goron Spice adds amazing flavor which enhances the meat. When paired with some Goron Whip, it’s even better! Enjoy this original poultry twist on the Hyrulean skewers!

Ingredients 
1 - 1 ½ lbs chicken breast or chicken thigh, cubed
1 small onion, sliced
3 garlic cloves, sliced
2-3 tbsp Goron Spice
½ cup lemon juice
¾ cup olive oil

Whisk the olive oil, lemon juice and Goron spice together in a bowl until well blended. Add the onion and garlic and stir. Add the chicken pieces and toss with hands to evenly coat the chicken with the marinade. Cover with plastic wrap and allow the chicken to marinate in the refrigerator for 24 hours.

Before assembling the skewers, soak the skewers in water for 15 minutes to ensure they don’t burn. I recommend using 6 inch skewers.

To assemble skewers, slowly push the skewer through the center of the chicken pieces, leaving a little air space between each piece of meat to allow even cooking. You can probably fit about 4-6 pieces of meat per skewer.

Once assembled, you can cook them a number of ways:
  1. Air fry the skewers in batches at 400 degrees Fahrenheit for 10-12 minutes, turning them halfway through.
  2. Grill at 425 degrees Fahrenheit for 10-14 minutes over direct heat, turning them halfway through.
  3. Bake in the oven at 425 degrees Fahrenheit for 12-15 minutes, turning them halfway through.

Serve two poultry skewers with a portion of Goron Whip to dip! I recommend serving with rice and either a salad or grilled vegetables (or Fried Wild Greens!).
