The wilds of Akkala were once home to soldiers, hunters, and those who preferred the solitude of the open landscape. In a region shaped by distance, wind, and long roads, meals weren’t a luxury, they were a necessity. Hearty, fire-cooked dishes became the standard, with meat skewers emerging as a portable, filling option that could be prepared almost anywhere.
"A juicy, filling snack made by grilling small chunks of meat on a skewer."
These meat skewers start with tender cubes of marinated steak, infused with a savory blend of soy, garlic, onion, citrus, and spices before being threaded onto skewers and finished over high heat. Quick to cook and easy to portion, they capture the spirit of Akkala cooking… simple, hearty, and built around the fire.
Ingredients
1½ - 2 lbs thick top sirloin steak or thick New York strip
½ cup olive oil
2 tbsp soy sauce
1 tbsp lemon juice
1 small onion, grated
3 garlic cloves, grated
½ cup olive oil
2 tbsp soy sauce
1 tbsp lemon juice
1 small onion, grated
3 garlic cloves, grated
½ tsp black pepper, plus additional
1 tsp smoked paprika, plus additional
½ tsp ground oregano
1 tsp smoked paprika, plus additional
½ tsp ground oregano
½ tsp salt
To prepare the steak, season both sides of the steak with ½ tsp salt, and then cut it into roughly 1¼ to 1½ inch cubes. Try to cut them as uniformly in size as possible. Smaller cubes may cook faster and get tough.
Whisk the olive oil, soy sauce, lemon juice grated onion, grated garlic, and spices together in a bowl until well blended. Add the cubed steak and toss with hands to evenly coat the steak with the marinade. Cover with plastic wrap and allow the steak to marinate in the refrigerator for 6-12 hours (overnight is fine).
Before assembling the skewers, soak the skewers in water for 15 minutes to ensure they don’t burn. I recommend using 6 inch skewers.
To assemble the skewers, slowly push the skewer through the center of the steak cubes, leaving a little air space between each piece of meat to allow even cooking. You can probably fit about 4-5 pieces of meat per skewer. Sprinkle a little additional black pepper ann paprika over the skewers before cooking.
Once assembled, you can cook them a number of ways:
- Air fry the skewers in batches at 400°F. Cook for 2-4 minutes, flip the skewers, and then cook for 2-4 minutes more.Grill at 450°F.
- Grill for 2-4 minutes, flip the skewers, and then grill for 2-4 minutes more.
- Set the oven to broil and place the skewers on a baking sheet lined with aluminum foil. Broil for 2-4 minutes, flip the skewers, and then broil for 2-4 minutes more.
Serve two meat skewers with a portion of Goron Whip. I recommend serving with rice and either a salad or grilled vegetables (or Fried Wild Greens!).
