CARPACCIO DI SALMONE

 


As summer gives way to autumn on the Islands of Animal Crossing New Horizons, the rivers of these islands welcome some seasonal visitors. Salmon return to the freshwater streams, gathering near the mouths of the waterways that wind through the islands.

For island residents, September means salmon season. Fishing along the river mouths brings in these prized seasonal catches, which find their way into special autumn dishes.

One popular use of the salmon is Carpaccio di Salmone, a dish of thinly sliced raw or smoked salmon served with a simple lemon dressing. It’s the perfect light, small plate to enjoy on an island evening with a beverage of choice while watching the sun slowly set below the ocean horizon.

Let’s take a look at the recipe.

Ingredients
4 oz smoked salmon, thinly sliced
3 tbsp olive oil
1 tbsp lemon juice
1 tsp dijon mustard
4-5 lemon slices
1 tbsp capers
Microgreens
Lemon wedge
Salt and black pepper 

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until fully combined.

Arrange the lemon slices on the bottom of the plate so they will peel out from underneath the salmon slices like they do in the fame photo. Sprinkle the capers evenly across the lemon slices. Now, place thinly sliced smoked salmon on top of the lemon slices on the plate, overlapping the slices slightly to create a continuous layer.

Spoon or lightly drizzle the prepared dressing over the salmon. Follow with a small handful of microgreens, garnishing the salmon. Serve immediately with a lemon wedge on the side. Enjoy!
